Living Rye Bread
To bake our bread we use only organic ingredients. We buy rye grain from the northern part of the USA and Canada.
We thoroughly wash our grain and then let berries soak for about 8 hours.
When rye absorbs enough water we sprout it for additional 10-12 hours. It is important to let sprouts grow only 2-3 mm no more because grain loses its nutritional value.
After that, we wash sprouted berries again to wash off the metabolic products released during germination.
Now rye grain is ready to dry in the dehydrator, at 105F/41C.
